I spent the morning with Chef Teo from Union Restaurant (http://www.union72.ca/) in Toronto. This is the only restaurant I know of that has a Big Green Egg on their patio. It used daily to smoke and prep yummy stuff for the restaurant. He was looking for a small gas grill to go along side to prepare additional goodies for the patio. I suggest you give them a try. Their charcuterie and steak tartare is the best in town.
The past few days have been hectic. Thus the absence of updates. But tonight we’re back at it. Grilled Italian sausages with a Penne Bolognese. The twist I’m throwing in is to roast off the tomatoes on the BGE first to get the sugars flowing and adding a bit of smoke to the sauce. Not traditional but then neither am I.
