So the finale of the evenings meal was this.
I placed the thighs on onion slices to add some additional flavour to the chicken. What’s that you say? #Bacon needs more flavour? Of course not but there’s no rules so why not! I had made a Mango and Scotch Bonnet hot sauce about a week ago and decided that a little sweet and hot on top would cut the hickory smoke and compliment it well. Roasted fingerling potatoes and a spinach and arugula salad with a juicy beefsteak tomato to top it off. I’ve been told that I should have more greens in my life!
