Tonight’s menu went really well! Marinated the shrimp in red pepper jelly, dried chilli peppers, and raspberry wine vinegar. Basted with red pepper jelly as it came off the grill.
Grilled the pineapple, diced and added to the rice with lime zest, green onion and parsley (Low blows was out of cilantro). What a great combination!
